Jammy Biscuits

What you need:

200g self-raising flour, 100g caster sugar, 100g butter, 1 egg (lightly beaten) & 4 tbsp strawberry jam.

How you do it:

  1. 01. Preheat your oven to 190°C/Gas 5. In a large bowl rub the flour, sugar & butter together until the mixture resembles breadcrumbs (this can be done in a food processor). Then add enough egg, a little at a time, to bring the mixture together to form a stiff dough.
  2. 02. Flour your hands & shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices & place on a large baking sheet. Space them out as the mixture will spread when baking.
  3. 03. Make a small indentation in the middle of each slice with your thumb or the end of a wooden spoon & drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen & just golden.
  4. 04. Cool on a wire rack.

Frozen Banana & Chocolate Lollies

Batch of banana lollies decorated in many different ways

What you need:

4 bananas, 100g leftover chocolate (plain or milk), toasted hazelnuts, freeze dried strawberries or sprinkles to decorate & 8 wooden lolly sticks.

How you do it:

  1. 01. Put the peeled bananas on a plate into the freezer & leave them until they are frozen.
  2. 02. Melt some leftover chocolate, then leave it to cool down (don’t let it set).
  3. 03. Take the bananas out of the freezer & while they are still frozen, cut them in half, then poke a wooden lolly stick into the end of the banana (to make a lolly).
  4. 04. Coat the banana with the cooled chocolate & put on any nuts/decorations/sprinkles, put the bananas on a plate lined with greaseproof paper, then allow the chocolate to set for a few minutes in the refridgerator.
  5. 05. Once the chocolate is set, put the bananas in a container & pop them back into the freezer & wait until they are frozen before you eat them!
