After an indulgent Christmas, Slimming World have kindly offered some inspiration for some delicious recipes that will help you feel great!
Mixed Berry Pancakes

Rise and shine the American way with these awesome fluffy and fruity pancakes. Served with summer berries and creamy fromage frais, they make a tasty alternative start to the day.
What you need:
400g fresh mixed berries (blackberries, blueberries, raspberries & strawberries), 1 tbsp sweetener Icing sugar (to dust – optional), fat free natural fromage frais (to serve) & fresh mint leaves (to decorate).
For the Pancakes:
150g plain flour, 1 tbsp sweetener, salt, 4 large eggs (beaten), 100ml skimmed milk, 1 tbsp finely grated orange zest, 1 tsp vanilla essence & low calorie cooking spray.
How you do it:
- 01. Place the berries in a bowl with the sweetener & toss to mix well. Leave to stand at room temperature for 20–30 minutes.
- 02. To make the pancakes, sift the flour into a bowl with the sweetener & a pinch of salt. Mix in the eggs, milk, orange zest and vanilla essence & whisk until smooth.
- 03. Spray a small frying pan with low calorie cooking spray & place over a high heat. Pour one-eighth of the batter into the pan to coat the bottom, tilting & swirling the pan to spread the batter.
- 04. Cook for 1–2 minutes or until lightly browned at the base then carefully flip over & cook the other side for 1–2 minutes. Remove from the pan, fold into quarters & keep warm while you make the remaining pancakes.
- 05. Serve the pancakes with the berries. They’re delicious lightly dusted with icing sugar (1 syn per level teaspoon) & served with a spoonful of fromage frais & a sprig of mint.
Tip: Top with a dollop of ice cream for a dazzling dessert.
Easy Chicken Curry

This Free chicken curry is quick, simple and a firm family favourite. Whether you like your curry on the mild side, or you like curry with a kick, this quick and easy recipe is delicious.
What you need:
Low calorie cooking spray, 3 garlic cloves(peeled & crushed), 2 large onions (peeled & finely chopped), ½ green pepper & ½ red pepper (deseeded & chopped in chunks), 4 skinless chicken breasts (chopped into chunks), 100g chopped mushrooms, 400g tin chopped tomatoes, 225ml chicken stock, 2 heaped tsp curry spice (mild, medium or hot — your choice), fat free natural yogurt, fresh coriander & fresh green chilli (to serve).
How you do it:
- 01. Place the chicken on a plate, season well & set aside.
- 02. Spray a frying pan with low calorie cooking spray & place over a medium heat. Add the onion, mushrooms and peppers and stir-fry for 5–6 minutes or until starting to lightly brown.
- 03. Stir in the garlic, curry powder & stir-fry over a high heat for 1–2 minutes.
- 04. Add the chicken & cook for 2–3 minutes until sealed, then add the tomatoes & stock. Bring to the boil, cover tightly, reduce the heat to low & allow to simmer gently for 40–45 minutes, stirring occasionally until the chicken is cooked through.
- 05. Remove the frying pan from the heat, adjust the seasoning to taste & serve garnished with chopped coriander & sliced green chillies.
Tip: If you enjoy a creamier curry or want to make the curry less hot swirl in some fat free natural yogurt.
Classic Tiramisu

This just proves that nothing is off the menu with Slimming World! Our slimline version of this elegant Italian classic looks and tastes sublime.
What you need:
2 medium egg yolks*, 3 tbsp sweetener, vanilla essence (few drops), 400g quark, 12 sponge fingers, 2 tsp instant coffee (dissolved in 2 tbsp water), 2 tbsp brandy, 150g fat free natural fromage frais, 6 chocolate coated coffee beans & 2 level tsp cocoa powder.
How you do it:
- 01. In a mixing bowl, whisk the egg yolks & 2 tablespoons of the sweetener together until thick & creamy. Add the vanilla essence & 2 tablespoons of quark & whisk in gently. Gradually whisk in the remaining quark to form a smooth cream.
- 02. Break the sponge fingers in half & place them in a shallow dish. Mix the coffee & brandy together & drizzle over the sponge fingers, mixing them gently to coat in the liquid.
- 03. Divide half of the sponge fingers between six small serving glasses, top with half of the quark mixture, then with the rest of the sponge fingers & a second layer of quark. Chill for 30 minutes.
- 04. Sweeten the fromage frais with the remaining sweetener & spoon on top of each glass. Decorate with chocolate coated coffee beans & dust with cocoa before serving.
* Pregnant women, the elderly & babies are advised not to eat raw or partially cooked eggs.
